High oleic acid cultivars of sunflower, canola and palm oil have been bred and a HO soybean has been created with CRISPR gene editing (non-transgenic).
Olive oil is naturally high in oleic acid, but also has antioxidant polyphenols. Using HO variants of the same seed oils would help control for this as well as properties of fish oil that may differ from vegetable oils. Such a study could focus on the effects of fatty acid content.
